Pumpkin Pie

1 pie crust
1 1/2 cups of soy milk
1 1/2 cups cooked pumpkin or squash
1/4 to 1/2 cup maple syrup or honey (depends on your taste and the sweetness of the squash!)
1/4 cup cornstarch*
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/8 tsp cloves

Preheat the oven to 375°. Put all ingredients in the blender or food processor. Mix until it is smooth. Pour the mixture into the unbaked crust. Bake at 375° for 55 minutes. Cool at least 3 hours before cutting.

* If you like, you can use 3 TBS of agar instead. If you are using the agar, combine it with the soymilk, and let stand for 5 minutes. Then, bring it to a boil and simmer 2 minutes.
