| Peach, Plum, and Ginger Chutney |

| This very light summer recipe is vegan and gluten free. It was created by our own Donna Quinn. |
- 1 red pepper
- 1 candy onion (local), diced
- 2 tbsp. organic ginger
- 3 cloves organic garlic, minced
- chile pepper
- curry powder
- 3 plums, peeled and diced
- 2 peaches, peeled and diced
- 2 tbsp. organic cider vinegar
- 1/4 cup orange juice
- 2 tbsp. brown sugar
- salt and pepper

1. Heat oil until hot, add peppers, onions, ginger, garlic, chile and Madras curry powder, sauté 5 minutes.
2. Add remaining ingredients, simmer 10 minutes. Chill.
Keeps 2 weeks in fridge. |
