| Cake: Cream butter, sugar, and vanilla; add lemon juice; add eggs one at a time - mix after each egg; Mix in sour cream, flour and salt until thoroughly combined. Pour batter into two 8” x 4” buttered loaf pans . Bake at 350 degrees 35- 40 minutes, Serve plain, with lemon curd or fruit sauce.
Sauce: Place ingredients in small saucepan over low heat. Slightly mash fruit; add sugar or fruit spread and cook until sugar or fruit spread is completely dissolved. Remove from heat. Experiment with different fruit flavor combinations.
