Cheesecake and Pumpkin Comforts
  • 24 oz. organic cream cheese
  • 1/2 cup organic sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 pkg graham crackers
  • 1/4 lb butter
  • 1 tsp Ground organic ginger
  • 1/2 tsp organic cinnamon
  • 15 oz can organic pumpkin
  • 3 tbsp. Molasses
Preheat oven to 350; Crush graham crackers into fine crumbs; add ginger, cinnamon and melted butter and mix; spoon 1 rounded tbsp crumb mixture into cupcake paper and press firmly to bottom; Mix eggs, cream cheese, sugar and vanilla until smooth; pour 1/2 of the cream cheese mixture into cupcakes; add pumpkin and molasses to remaining cream cheese and mix; pour pumpkin mixture into the center of each cupcake; bake at 350 for 30 minutes. Makes 40 comforts. Serve with molasses caramel. This may be made gluten free by substituting gluten free cookies (shortbread, ginger or vanilla work well) for graham crackers.
