Sesame Spread
Natural sesame seeds are occasionally referred to as “brown” because they are a darker color than the hulled and bleached ones often found in supermarkets. The recipe is from The New Laurel’s Kitchen by Laurel Robertson, Carol Flinders, and Brian Ruppenthal. Makes 3/4 cup with honey, 1 cup with raisins.
  • 3/4 cup natural sesame seeds
  • 1 tbsp. honey (or other sweetener)
  • 1/4 cup water (or apple juice)
  • 1/8 tsp. salt
Toast sesame seeds and grind into a meal in blender; remove to a bowl and add honey, water, and salt. The mixture will thicken as it cools, so you may want to thin it by adding more water or juice.

Slightly less quick, but very good, is to use raisins for sweetener. Pour boiling water over 1/2 cup raisins, and let them stand until cool. Blend or process the soaked raisins along with the seeds, adding the soaking water as needed to achieve a reasonably smooth grind.
